摘要:
探讨成熟度和不同温度对乙烯处理金艳猕猴桃后熟特性的影响,为合理制定猕猴桃催熟方案提供理论依据。以金艳猕猴桃为研究对象,分析不同成熟度果实(盛花期后154~159 d)在外源乙烯(100 μL/L)处理后的果实品质特性,以及不同温度条件下外源乙烯催熟果实后熟特性。结果显示,采用100 μL/L外源乙烯处理可实现盛花期后(DAFB) 154~189 d金艳猕猴桃的快速软化,货架3 d果实硬度降低至商品成熟度(<1 kgf),软化后果实可溶性固形物含量达到13.0%~14.0%,可滴定酸含量降低至0.4%以下,但盛花期后175 d果实催熟后果肉颜色品质显著优于低成熟度果实,成熟度越高乙烯催熟效果越明显。温度对外源乙烯催熟效果影响较大,乙烯处理可显著加速/改变 20 ℃ 货架温度条件下果实的软化进程,而对10 ℃条件下果实软化作用效果不明显。以上研究表明,温度和成熟度对外源乙烯催熟金艳猕猴桃效果均有影响,且主要受温度影响,成熟度对外源乙烯作用的影响主要表现为成熟度越高对乙烯的敏感性越高。该研究为猕猴桃早采上市及人工催熟技术提供参考。
