摘要:
为明确东台西瓜的主特征营养成分及特征代谢物,探究特征营养成分及代谢物之间的关系,以东台西瓜主栽品种4K、苏蜜518、美都、8424为研究对象,利用营养指标检测及非靶向代谢组学技术分析其特征营养成分及典型差异代谢物,并通过KEGG富集解析其代谢通路差异。结果表明,4K西瓜的总糖、葡萄糖、蔗糖、可溶性固形物含量显著高于其他品种,甜度较高,苏蜜518中瓜氨酸含量最高,美都中的精氨酸含量最高。代谢物分析结果表明,4个西瓜品种果肉中共鉴定出97种代谢物,其中氨基酸类代谢物23个,占比23.71%,氨基酸类代谢物是4个西瓜品种间的主要差异代谢物。KEGG富集分析发现,差异代谢物主要富集于硫代葡萄糖苷生物合成、2-酮戊二酸代谢、氨基酸生物合成、氨酰-tRNA生物合成、氰胺酸代谢、缬氨酸、亮氨酸和异亮氨酸降解等通路,美都和8424这2个品种代谢物差异较小。明确东台西瓜不同主栽品种的特征营养品质及代谢物,可为地理标志农产品东台西瓜品质提升提供理论基础,对促进东台西瓜产业提档升级具有重要意义。
