摘要:
通过对黑花生种子进行X射线辐照处理,研究其对黑花生多酚氧化酶(PPO)活性的影响。结果表明,在X射线激励电压为60 kV、辐照时间为5 min时,黑花生PPO活性最大(559.8 U)。在X射线激励电压为65 kV、辐照时间为3 min时,黑花生PPO活性最低(145.8 U)。X射线对黑花生PPO活性影响最小的处理条件为X射线激励电压为55 kV、处理时间4 min。总体上说随着X射线激励电压的增大,黑花生PPO活性先增大后减小;随着辐照时间的延长,PPO活性先增大后减小。
