摘要:
腐胺属于生物胺中的一种,是二胺类物质。食品中含量较高的腐胺会影响人体健康,通过多种技术手段可检测到食品是否含有腐胺。对国内外食品中腐胺合成途径、影响腐胺合成的因素、腐胺合成基因的鉴定和表达进行了综述,以期控制食品中的腐胺含量,确保食品安全。
