摘要:
为了研究传统依水圈养、生物发酵床旱养对220日龄高邮鸭鸭肉品质的影响，选取60日龄的高邮鸭180羽，随机分为2组，分别为依水圈养组(对照组)和发酵床旱养组(试验组)。结果表明，与对照组相比，发酵床旱养220日龄高邮鸭胸肌的亮度值、滴水损失、蒸煮损失与腿肌的滴水损失均显著升高(P<0.05)，腿肌的剪切力显著下降(P<0.05)。研究结果揭示了生物发酵床旱养模式对220日龄高邮鸭胸肌的肉色、系水力产生不利影响，可显著改善腿肌的嫩度值，但对其他肉品质性状未产生不利影响。
