摘要:
为探究设施栽培和常规栽培对马铃薯的基本营养成分含量、总酚含量和抗氧化活性的影响,以5种不同品种马铃薯为试验材料,测定其在2种栽培方式下的含水量及维生素C、粗脂肪、总蛋白、可溶性糖、淀粉、总酚含量,并通过测定其DPPH·清除能力评价抗氧化活性。结果表明,不同品种间营养成分差异显著;2种不同栽培方式对马铃薯的各基本营养成分含量影响显著,设施栽培的马铃薯含水量和总蛋白含量高于常规栽培,而维生素C、粗脂肪、可溶性糖、淀粉和总酚含量则是常规栽培马铃薯更高。
