摘要:
4-羟基壬烯醛(HNE)是ω-6 多不饱和脂肪酸(PUFAs)的氧化产物,研究表明HNE具有生理和病理学作用,与多种疾病的发生、发展密切相关。就HNE的形成机制、形态分布、代谢、病理和生理学意义、检测方法、安全问题等进行综述,并对提升食品营养风味、减少HNE形成的新型食品加工方法进行展望。
