摘要:
提高益生菌抗热性的研究一直是工业化喷雾干燥生产益生菌奶粉的热点与难点,研究益生菌 FM-LP-4 的热激预处理条件,优化菌体经热激预处理后使用牛蒡复合抗热保护剂的喷雾干燥工艺。结果表明,适宜进行热激的益生菌培养时间段为10~11 h,最适热激温度为55 ℃,热激时间为25 min。喷雾干燥的最优工艺为:出口温度80 ℃,进口温度170 ℃,进料速率0.8 L/h,此时活菌数为4.64×109 CFU/mL。热激菌体加牛蒡复合抗热保护剂经优化的喷雾干燥工艺获得益生菌奶粉,其中益生菌活菌数比对照提高约1个数量级。
