摘要:
环境温度和氮肥是影响稻米品质的2个重要因素。灌浆期高温严重影响水稻的品质，缓控释肥有利于水稻品质的提升，缓控释肥对胁迫高温下不同粒位籽粒品质的交互作用研究较少。本试验采用2个播期、3种肥料下的双因素试验，研究缓控释肥、环境温度及其交互作用对胁迫下水稻不同粒位籽粒淀粉组成、贮藏蛋白积累和稻米淀粉糊化特性的影响，探讨缓控释肥对高温胁迫下水稻不同籽粒品质的潜在调节作用。结果表明，播期处理对各品质的影响大于肥料处理。高温播期显著增加了清蛋白含量，显著降低了直链淀粉、醇溶蛋白含量。缓控释肥对直链淀粉和蛋白质的影响因品种不一致。高温播期对籼稻大米的适口性并未造成负面影响。粒位对直链淀粉和蛋白组分无显著影响。高温播期使米粉的峰值黏度和崩解值升高，消减值降低。整精米率与峰值黏度、崩解值BD呈负相关，高温降低碾米品质的同时利于食味品质的提升。不同缓控释肥对高温下不同品种白垩发生的影响不一致，腐殖酸包膜缓释肥加重了高温下Y两优911的垩白，降低了桃优香占的垩白。但缓控释肥在高温下对稻米食味品质影响总体不显著。
