摘要:
为探究磷酸三钠(trisodium phosphate,TSP)处理对采后龙眼果实贮藏过程中糖代谢的影响,以石硖龙眼为试材,使用0.5 g/L TSP处理龙眼果实作为试验组,清水处理为对照组,采用高效液相色谱法(HPLC)测定贮藏期间可溶性糖含量,分光光度法测定糖代谢相关酶活性,最后通过SPSS分析指标间的相关性。结果表明,TSP处理可维持龙眼果实贮藏期间较高的TSS含量和蔗糖含量,延缓龙眼果实葡萄糖和果糖含量的上升。糖代谢酶活性变化数据和相关性分析结果表明,TSP处理可有效抑制龙眼果实AI、NI、SS-c、HXK和FRK等酶活性的上升,从而保持较高的SPS和SS-s活性,延缓了贮藏过程中龙眼果实蔗糖的分解,保持较高的可溶性糖含量。由此可知,TSP处理可以通过调节蔗糖代谢中相关酶的活性来维持龙眼果实较好的食用品质。
