摘要:
采用高效液相色谱法(HPLC)对乳熟期甜玉米晶甜5号中的游离糖、氨基酸进行测定,检测到4种游离糖、18种游离氨基酸。游离糖为果糖、葡萄糖、蔗糖、麦芽糖,含量分别为18.54、28.36、56.13、0.09 mg/g。游离氨基酸中,甜味氨基酸丙氨酸的含量(9.70 mg/g)最高,其次为鲜味氨基酸谷氨酸(3.19 mg/g)、天冬酰胺(2.62 mg/g),功能性氨基酸γ-氨基丁酸的含量为0.18 mg/g。本研究结果将为甜玉米的风味及营养评价提供依据。
