摘要:
为了研究粉碎和干燥方法对蓝莓渣营养成分和生理活性物质的影响,使用超微粉碎和普通粉碎方法对蓝莓进行粉碎,然后用低温烘干和冷冻干燥法对蓝莓渣进行干燥,同时对蓝莓汁和蓝莓渣中的营养成分和生理活性物质进行分析。结果表明:与普通粉碎法相比,超微粉碎可显著增加蓝莓汁中的营养成分、生理活性物质(主要指含酚、酮和花色苷)和可溶性膳食纤维含量,同时减少这些物质在蓝莓渣中的残留量;无论采用何种粉碎方法,蓝莓渣中均残留大量的营养成分和生理活性物质,且膳食纤维主要存在于蓝莓渣中;冷冻干燥法处理的蓝莓渣中的营养成分的含量显著高于烘
