摘要:
以黄、紫洋葱的外层果皮和内层果肉为试验材料,经乙醇提取后测定总酚、总黄酮含量以及抗氧化性能指标(DPPH自由基清除性能、ABTS自由基清除性能和还原能力)。结果表明,紫色洋葱外层果皮及果肉的总酚、总黄酮含量以及抗氧化活性均高于黄色洋葱;洋葱外层果皮的总酚、总黄酮含量以及抗氧化活性均高于内层果肉(P<0.01);洋葱中总酚、总黄酮含量与各抗氧化活性指标之间存在极显著相关性(P<0.01)。
