摘要:
用4种不同浓度(0.5%、1.0%、1.5%、2.0%)的壳聚糖对鲜黄瓜进行涂膜处理,再于4、25 ℃环境贮藏,分别每隔3 d测定贮藏期间失质量率及维生素C、叶绿素、可溶性糖含量等理化指标并结合感官评价评定壳聚糖涂膜的保鲜效果。结果表明,1.0%壳聚糖保鲜效果最好,4 ℃贮藏12 d时,1.0%壳聚糖失质量率、维生素C含量、叶绿素含量、可溶性糖含量依次为21.2%、109.7 mg/100 g、0.211 mg/g、1.33%;25 ℃贮藏环境下,1.0%壳聚糖失质量率、维生素C含量、叶绿素含量、可溶性糖含量依次为14.2%、104.3 mg/100 g、0.187 mg/g、1.21%。可见4 ℃贮藏环境比 25 ℃ 贮藏环境保鲜效果更好,感官评分在8分以上,能较好维持黄瓜的外观品质和口感。
