摘要:
随着养殖业进入规模化阶段,抗生素在养殖业中被广泛使用。尽管抗生素本身在动物体内积累量很低,但由抗生素诱导产生的耐药基因会残留在肉制品等食品中,并通过食物链转移到人体。结合最新文献,对食品中抗生素耐药基因的产生和转移进行综述,阐明抗生素耐药基因古已有之,大致可分为固有耐药基因和获得性耐药基因,固有耐药基因一般通过代际遗传在同一种属细菌间传递,具有较小的传播风险;而获得性耐药基因的传播与抗生素或环境压力有关,可以在不同种属细菌间传播,推定其是食品中抗生素耐药基因转移和传播的主要原因;还介绍了食品中抗生素耐药基因的检验方法和原理,提出建立食品中残留抗生素耐药基因检测规范体系的必要性。
