在当今快节奏生活的背景下,罐头食品满足了消费者对方便食品的需求,但消费者对其食品质量与安全方面的顾虑阻碍了罐头食品市场的发展。水果罐头是罐头食品的重要品类之一。近几年,水果罐头企业不仅在果肉形态、包装材料等食品质量方面进行改进,并且严格控制防腐剂用量,进行农药残留检测或采用危害分析与关键控制点(HACCP)体系进一步提高水果罐头食品的安全水平。但尚不清楚水果罐头企业在食品质量和安全方面的变化对消费者购买行为的影响。基于选择实验,通过问卷星样本服务,回收438份有效问卷,采用随机参数Logit模型对比分析了消费者对黄桃罐头质量属性(果肉形态、包装材料、价格)和安全属性(“通过HACCP体系认证”“不添加防腐剂”“通过农药残留检测”)的偏好与支付意愿,揭示了食品危害相关风险感知与安全属性偏好的交互效应。结果表明,消费者对质量属性和安全属性的偏好存在差异,并且对安全属性的支付意愿高于质量属性,其中“通过HACCP体系认证”的支付意愿最高。上述研究结论为水果罐头企业和其他食品加工企业在生产管理与营销宣传以及政府有效监管食品质量与安全提供了对策建议。
