摘要:
池塘内循环水养殖(IPRA)模式下的大口黑鲈与池塘养殖相比,其鱼肉品质有一定提升,但缺乏机制研究。采用iTRAQ技术对2种养殖模式下大口黑鲈鱼肉中蛋白质表达进行定量及生物信息学分析。结果显示,IPRA养殖与传统池塘养殖相比,共有差异蛋白152个,其中,上调蛋白数98个,下调蛋白数54个;筛选得鱼肉品质密切相关的28个目标差异蛋白,主要分成6类,分别为肌动蛋白细胞骨架调节(8个)、糖酵解(8个)、柠檬酸循环(5个)、氧化磷酸化(3个)、钙信号通路(3个)和热休克(1个),主要影响鱼肉的纤维组成、色泽、嫩度等方面。与传统池塘养殖模式相比,IPRA养殖的大口黑鲈肌肉中糖酵解、TCA循环、氧化磷酸化、钙离子结合及抗应激能力均有显著加强,表明IPRA养殖通过加强一定的运动,提高鱼体代谢,从而改善鱼肉营养和品质。
