摘要:
紫甘薯具有丰富的酚类物质,因此有抗氧化活性,为探明新选育的滇紫甘薯抗氧化组分和活性,为滇紫甘薯系列保健食品的开发提供理论基础。采用紫外分光光度计法测定了云南农业大学选育的滇紫甘薯新品种的花色苷、总黄酮、绿原酸、总酚、β-胡萝卜素等物质的含量及抗氧化活性。不同滇紫甘薯品种的花色苷含量和总还原力均高于对照;滇紫甘薯对3种自由基的清除能力表现为ABTS自由基>DPPH自由基>羟自由基,说明滇紫甘薯对ABTS自由基清除能力最强,且与含量呈正相关。其中,β-胡萝卜素含量在滇紫甘薯24号中较低,但其他营养物质含量均较高,尤其绿原酸含量最高,且对ABTS和DPPH 2种自由基的EC50较小;滇紫甘薯54号花色苷含量、总黄酮含量和总还原力最高,清除ABTS和DPPH 2种自由基的EC50最小,抗氧化活性最强。主成分分析结果表明,滇紫甘薯24号和滇紫甘薯54号抗氧化组分较为均衡,滇紫甘薯24号和滇紫甘薯54号可作为功能型食品添加剂或保健食品原料使用,具有广阔的应用前景。
