摘要:

以23份早熟、26份中熟、11份晚熟黄肉桃品种为材料，使用高效液相色谱(HPLC)测定果肉中糖酸含量，并进行分析比较。结果表明，不同成熟期黄肉桃各糖、酸组分的含量及其所占总量的比例均有差异，并有明显的规律。蔗糖含量及其所占总糖的比例表现为早熟>中熟>晚熟；山梨醇则正好相反，为早熟<中熟<晚熟；葡萄糖和果糖表现为晚熟高于早熟和中熟，早熟与中熟间差异不显著；苹果酸含量及其所占总酸的比例表现为早熟<中熟<晚熟；奎尼酸与苹果酸相反，表现为早熟>中熟>晚熟；不同熟期间柠檬酸差异不显著。不同成熟期的黄肉桃总糖含量、总
