摘要:
利用维生素C能将Fe3+还原为Fe2+,Fe2+能与K3[Fe(CN)6]反应生成可溶性普鲁士蓝。通过测定普鲁士蓝在716 nm处的吸光度间接测定蔬菜中维生素C的含量。线性回归方程为D=0.214 8C-0.0254,相关系数r=0999 3。线性范围在0.12~5.60 μg/mL之间。摩尔吸光系数为3.77×104 L/(mol·cm)。测定了番茄、黄瓜中的维生素C含量,回收率分别为102.2%、99.6%,测定结果令人满意。
