摘要:
以蜜玉、酥玉及其亲本蜜梨、黄冠和砀山酥梨为试材,将成熟度一致的5个梨品种于室温贮藏,每7d对果实质地参数及可溶性固形物、总酸和单果重进行测定,结合贮藏指数分析、相关性分析和主成分分析对5个梨品种贮藏性进行综合评价。结果表明,贮藏期间,蜜玉、黄冠、酥玉和砀山酥梨果实硬度、单果重总体呈下降趋势,黏性、胶着性、咀嚼性和可溶性固形物总体呈先升后降的趋势,且蜜玉和酥玉质地变化规律多趋近于父本;总酸及固酸比变化规律不一致,与品种关系密切。基于TPA的贮藏指数(SI)得出,蜜梨SI>0且最高,黄冠除SI弹性外,其余质地指标SI<0且最低。相关性分析表明,质地参数间除硬度与弹性相关性较差外,其余均呈显著正相关;硬度、黏性和胶着性均与可溶性固形物和固酸比呈极显著相关;贮藏时间与单果重、硬度和弹性呈极显著负相关。主成分分析表明,咀嚼性、黏性、胶着性、内聚性和弹性是影响梨果实质地的主要性状,并且是将蜜玉、酥玉与父本和黄冠与蜜梨区分开的重要质地参数。基于数学模型的综合评价表明,蜜玉和黄冠常温贮藏7d时果实质地、主要品质及单果重最佳,而酥玉、砀山酥梨和蜜梨分别为21、49和42 d。
