摘要:
研究了排湿压力对苹果微波干燥过程中干燥速率和干后制品品质的影响,通过分析微波干燥速率曲线,发现排湿压力决定干燥速率的峰值,对干燥时间与能耗的影响较小,而对干后制品品质的影响较大。其中,在70 ℃、排湿压力34.47 kPa时,苹果干后制品品质最好,这将为提高苹果干制品品质提供重要参考。
