摘要:
以无锡产水蜜桃为材料进行辐照处理，并在不同温度条件下贮藏，定期观察和测定水蜜桃的感官指标及卫生指标，研究辐照处理对水蜜桃感官品质和保鲜效果的影响。结果表明：1.0 kGy辐照处理的水蜜桃贮藏好果率高于对照组；辐照可以显著降低水蜜桃表面污染的微生物，大肠菌群D10值(杀灭90%微生物所需辐射剂量)为0.21 kGy，菌落总数D10值为1.94 kGy；0.5 kGy辐照处理对水蜜桃的感官品质影响最小；4 ℃低温储存对水蜜桃的感官品质保持最好。辐照技术在水蜜桃保鲜上存在一定的应用前景。
