摘要:
以红肉火龙果品种“金都一号”为材料，采用不同温度(45、50、55、60 ℃)热水处理果实10 min后，冷激 15 min。常温条件下，测定失质量率、病情指数、可溶性固体物(TSS)含量、果皮厚度、过氧化物酶(POD)活性、超氧化物歧化酶(SOD)活性、花青苷含量、抗氧化活性等生理指标。结果表明，50 ℃热处理能有效延缓采后红肉火龙果果实中可溶性固形物含量和失质量率的下降，抑制了果实中SOD、POD活性的下降，延缓了花青苷的降解速度以及抗氧化活性的降低，有效地提高了红肉火龙果果实采后的保鲜效果。
