摘要:
采用超声波辅助提取百脉根花色素,通过正交试验确定最佳提取工艺,并研究了色素的稳定性。结果表明,百脉根花色素的最佳提取条件是:料液比1 ∶20(g ∶mL),提取温度60 ℃,超声时间20 min,在最佳工艺条件下百脉根花色素得率为21.70 mg/g;百脉根花色素对光照比较稳定;在溶液pH 值3~6时百脉根花色素稳定,在碱性条件下颜色发生改变;随着H2O2和抗血酸浓度的增大,色素吸光度值有减小趋势;添加氯化钠、蔗糖及金属离子Ca2+、Mg<
