摘要:
通过单因子试验与正交试验,对酿酒葡萄皮渣花色苷乙醇溶液提取工艺条件进行了研究,确定最优工艺条件为:料液比1 g ∶30 mL,提取溶剂的乙醇浓度和pH值分别为60%、1.0,提取温度和时间分别为80 ℃、80 min,花色苷提取率为0.168 4%,产品得率为2.57%,产品花色苷含量为6.55%。产品呈紫褐色,易溶于pH值为1.0的60%乙醇溶液,溶于该溶液后呈紫红色,色泽鲜艳,可进一步分离纯化得到纯度更高的产品,开发为食品着色剂和抗氧化剂。
