摘要:
以酥梨为材料,贮藏前短时间密闭包装形成超低氧环境,并在随后的冷藏期间对梨果实果皮中α-法尼烯、共轭三烯含量进行测定,探寻贮前超低氧处理对冷藏期间梨果皮α-法尼烯、共轭三烯含量变化的影响。结果表明,超低氧处理时间对果皮中萜烯类物质含量与组成的变化以及果实的贮藏品质有一定影响,且萜烯类物质含量、组成变化与酥梨品质有着密切关系,其中以贮前超低氧处理3、5 d果实的品质最好。
