摘要:
果蔬贮藏加工过程中农药残留的变化会对果蔬安全性产生影响,大部分加工过程可降低果蔬中的农药残留,如清洗、去皮等;但也有一些加工如干制、腌制等,可能会提高农药残留水平。着重讨论了果蔬清洗、去皮、水煮、干制、腌制等加工处理对果蔬农药残留的影响,为确定合适的家庭处理方法提供参考,为膳食评估提供数据依据,以维护消费者健康。
