摘要:
探讨了105日龄海康鸡屠宰性能和肉质特性,结果表明,公母鸡屠宰率分别为91.48%和92.52%,全净膛率分别为61.85%和61.35%;腿肌的最大pH值显著高于胸肌(P<0.05);胸肌肌纤维面积和直径均极显著低于腿肌(P<0.01);海康鸡肌肉粗蛋白含量为15.54%~20.20%,总水分含量为71.93%~75.13%;多不饱和脂肪酸和必需脂肪酸含量表现为公鸡高于母鸡、腿肌高于胸肌;参考FAO/WHO模式,大部分必需氨基酸含量高于参考值,且氨基酸比值系数分(SRC)在77.72~79.36之间,胸肌肌苷酸含量显著高于腿肌(P<0.05),初步表明海康鸡产肉性能良好,可作为优良的屠宰加工型肉鸡配套应用提供参考。
