摘要:
以13周龄黑羽番鸭新品系为材料,测定其屠宰性能、常规肉品质等。结果表明,除了腹脂重,13周龄黑羽番鸭公鸭的各项屠宰指标均极显著性高于母鸭。公、母鸭的屠宰率分别为91.85%、90.21%,均在90%以上;公、母鸭的半净膛率分别为85.41%、82.51%,均高于80%;公、母鸭的全净膛率分别为79.29%、75.36%,均高于75%;公、母鸭的胸肌率分别为17.85%、18.50%;公、母鸭的腿肌率分别为11.67%、10.19%。黑羽番鸭公鸭胸、腿肌pH值、腿肌剪切力、胸肌失水率等3个指标与母鸭差异不显著,公鸭胸肌剪切力、腿肌失水率显著高于母鸭。同性别黑羽番鸭中,腿肌pH值、剪切力显著高于胸肌,失水率显著低于胸肌。
