摘要:
为探究云烟87与云烟116品种烟叶的常规化学成分、代谢物和感官质量的差异及三者间的关系,在云南省红河州6个试验地同时开展试验,取烤后C3F等级烟叶进行常规化学成分测定、GC-MS分析和感官质量评价。结果表明,云烟87烟叶的总糖、还原糖和生物碱含量显著高于云烟116,淀粉含量和两糖比则与之相反;云烟87烟叶整体感官质量要优于云烟116,具体表现为香气质较好、香气量更足、刺激性较小、余味更舒适、清甜香型风格更突出;通过多元统计分析方法共筛选出31种差异代谢物,主要是酯类、烷类和醛类化合物,这类物质是辨别2个品种烟叶的关键生物标记物;和弦图表明多数差异代谢物与香气质、香气量、刺激性、余味、清甜香型风格彰显度得分呈正相关,多数酯类及2-庚醇、苯甲醛和壬酸等烤烟致香物质在云烟87烟叶中的高表达量是造成该品种烟叶感官质量优于云烟116的重要原因;通过代谢通路富集分析发现,差异代谢物主要富集于碳水化合物代谢、氨基酸代谢和能量代谢等代谢通路中,其中,碳水化合物代谢是2个品种烟叶差异最显著的代谢途径。较低的酯类等香气物质含量是导致云烟116烟叶吃香味逊色于云烟87的重要原因,因此后续可通过适当的栽培、调制等措施提升此类物质含量,从而提升云烟116烟叶的品质。
