摘要:
以平菇为原料,采用复合酶法提取平菇多糖,选择粒度、料液比、提取时间、加酶量等进行单因素试验,得出在平菇粉末粒度为>80目、料液比为1 g ∶25 mL、时间1.5 h、复合酶(纤维素酶 ∶木瓜蛋白酶=1 ∶1)对底物的浓度为2.0%时平菇多糖的得率最高;固定上述提取条件,通过对温度、pH值、酶比进行3因素3水平正交试验,得出在温度为55 ℃、pH值为7、纤维素酶 ∶木瓜蛋白酶=2 ∶1时提取的多糖得率最高,为13.93%。
