摘要:
食源性致病菌是导致果蔬腐败变质的主要因素,利用抗菌肽高效杀菌、安全、无毒副作用等特点来保鲜果蔬具有潜在的应用价值。本文综述了动物源、微生物源和植物源的抗菌肽在果蔬保鲜及抗菌包装中的研究进展。
