摘要:
为比较不同品种鸡蛋外在蛋品质及营养成分含量的差异,在3个不同养鸡场随机选取3个鸡种(大恒鸡、泸宁鸡、科宝鸡)产蛋中期鸡蛋各60个,测定蛋质量、蛋黄质量、蛋清质量、蛋形指数、蛋壳厚度、蛋黄/蛋清比值、蛋清与蛋黄干物质含量、蛋壳与蛋黄颜色等常规鸡蛋品质,并测定蛋清内粗蛋白与蛋黄内粗蛋白、粗脂肪、钙、磷、铜、铁、锌、锰等营养指标。结果表明,3个品种鸡蛋外在品质和营养物质含量上存在显著差异(P<0.05):其中泸宁鸡的蛋黄/蛋清比值高于其他2组且差异显著(P<0.05),蛋黄红度值也大于另外2个品种且差异显著(P<0.05)。营养指标测定显示,科宝鸡鸡蛋中蛋清和蛋黄粗蛋白以及蛋黄粗脂肪、钙、磷、锌含量均显著低于其他2个鸡种(P<0.05);大恒鸡蛋清粗蛋白及蛋黄钙、锌、锰含量均显著高于其他2个鸡种(P<0.05);泸宁鸡营养价值居中,但蛋黄铜含量显著低于大恒鸡和科宝鸡(P<0.05)。
