摘要:
以绿茶为原料、β-环糊精为辅料，在单因素试验的基础上，利用Box-Benhnken中心组合设计和响应面分析法对绿茶茶多酚的水提取工艺参数进行优化研究。试验结果表明，所得最佳工艺条件为：β-环糊精与茶叶质量比0.4 ∶1、液料比26 ∶1、提取温度75 ℃、提取时间30 min、提取次数1次，在此条件下茶多酚提取率达到81.15%。与直接水提取法相比较，β-环糊精辅助提取的茶多酚提取率提高11.93百分点，并减少了提取次数。
