摘要:
乳酸菌是促进人体健康的一类典型益生菌,这类菌要达到其有益效果,活菌数至少应达到100万CFU/g。由于受到外界与人体胃环境的不良影响,裸露的菌体不易存活,将益生菌进行微胶囊化被认为是最为有效、最有前景的一种保护方法。本研究在单因素研究的基础上,采用响应面法对真空低温喷雾干燥制备微胶囊工艺参数进行优化。试验结果表明,在真空度为-0.05~-0.06 MPa条件下,最佳工艺条件为进风温度79.07 ℃,进料速度727.54 mL/h,菌壁比1 ∶4.55,保护载体(脱脂奶粉)量9.80%,此条件下的活菌数为2.81×108 CFU/g。
