摘要:
利用高效液相色谱(HPLC)、气相色谱(GC)和红外光谱(IR)分析法等对香菇(Lentinus edodes)发酵液中香菇胞外多糖(exopolysaccharides,EPS)2种组分EPS-1、EPS-2的化学结构进行特征分析,测定其抗氧化活性。结果表明,EPS-1的单糖组成主要为鼠李糖、阿拉伯糖和甘露糖,其摩尔比为1.7 ∶1.0 ∶3.0;EPS-2的单糖组成主要为鼠李糖、阿拉伯糖、甘露糖和葡萄糖,其摩尔比为7.2 ∶2.3 ∶1.0 ∶8.4;EPS-1、EPS-2均有较强的抗氧化活性,EPS-2 体外抗氧化活性相对更强。
