摘要:
研究热风(AD)、真空(VD)、真空冷冻(FD)、微波联合真空冷冻(MD+FD)、热风联合真空冷冻(AD+FD)、微波联合热风(MD+AD)6种干燥处理对荷叶离褶伞干制品营养成分与品质的影响。不同干燥处理中,MD+FD处理后蛋白含量与总酚含量最高,分别为(17.36±0.62) mg/g和(7.59±0.22) mg/g,显著高于其他干燥处理组(P<005)。FD、MD+FD和AD+FD等3种处理样品总色差ΔE较小,能较好保持产品色泽。对样品的复水性及质构特性评价表明,MD+FD组具有较高的复水比,呈现适中的硬度、较好的弹性,内聚性低,咀嚼性良好。进一步通过微观结构观察,MD+FD组样品呈现均匀的蜂窝结构。因此,MD+FD干燥处理产品能均衡地保留荷叶离褶伞营养成分、色泽,并具有较好的质构特性。
