摘要:
为评价不同芹菜品种的营养品质特征,以苏香芹、细香芹和西芹为材料,进行抗坏血酸、粗纤维和香精油含量的测定和相关性分析。结果表明,不同芹菜品种之间营养成分含量差异较大。芹菜叶片抗坏血酸含量表现为西芹>细香芹>苏香芹;叶柄抗坏血酸含量表现为苏香芹>西芹>细香芹;叶片粗纤维含量表现为细香芹>苏香芹>西芹;叶柄粗纤维含量表现为苏香芹>细香芹>西芹。苏香芹叶片抗坏血酸含量小于叶柄,而细香芹和西芹叶片抗坏血酸含量则大于叶柄。3种芹菜粗纤维含量均为叶片大于叶柄。苏香芹香精油含量最高,为103.81 mg/kg,可作为培育高香精油品种的资源。相关性分析结果显示:叶片抗坏血酸含量与叶柄抗坏血酸含量、叶片和叶柄粗纤维及香精油含量呈负相关,其余各性状之间均呈正相关,相关性不显著。本研究结果对不同芹菜品种中营养物质的评价具有一定的指导意义。
