摘要:
论述丝瓜机械损伤后的褐变因素,即酶促褐变。酶促褐变分为多酚氧化酶和过氧化物酶对褐变的影响。多酚氧化酶催化酚类物质形成醌类,醌聚合发生黑色或褐色沉淀,降低丝瓜的营养品质和商品价值。论述前人对丝瓜褐变的研究,总结前人对丝瓜褐变的研究方法以及对褐变的抑制研究,同时对丝瓜种质资源分类进行论述,从形态学标记、DNA分子标记两个方面阐述在丝瓜种质资源分类上的应用,对今后丝瓜种质资源分类的研究进行展望。
