摘要:
为生产高质量的火龙果果汁饮料,以火龙果果汁为原料,在4种常用稳定剂的单因素试验的基础上进行二元复配试验,再采用响应面设计方法进行复配稳定剂的配比优化。结果表明,添加0.05 g/L黄原胶、0.01 g/L CMC-Na、0.04 g/L魔芋胶和0.04 g/L果胶时,火龙果果汁饮料的稳定性及口感最佳,自然条件下存放216 h后仍无沉淀产生。
