摘要:
为明确不同产地(山西省偏关县、静乐县)藜麦种子的多糖提取率及其抑菌性、抗氧化性之间的差异,以蒸馏水为提取剂采用超声波法辅助提取藜麦多糖,滤纸片法测定抑菌活性;采用消除DPPH自由基法测定水提多糖的抗氧化活性,并用维生素C作阳性对照。结果表明:藜麦种子在料液比为1 g ∶10 mL时多糖提取率最高,且偏关县藜麦的多糖提取率(2 094.5 μg/g)显著高于静乐县藜麦的多糖提取率(1 781.5 μg/g)。藜麦多糖对DPPH自由基有清除能力,且随着多糖质量浓度的增加而呈现增大趋势。藜麦多糖对大肠杆菌有较强抑菌效果,但对金黄色葡萄球菌抑菌性较弱。
