摘要:
芦笋的嫩茎水分含量大,生长比较旺盛,易腐烂,不能长久保鲜。研究了壳聚糖涂膜前后芦笋贮藏品质的变化,用4种不同浓度的壳聚糖(0.25%、0.5%、1.0%、1.5%)涂抹芦笋,通过对比室温和低温2种贮藏条件,测定贮藏期间的失重率、总酸度、叶绿素含量、维生素C含量等理化指标,进而结合感官指标对其品质进行评判。结果表明,壳聚糖浓度为0.5%处理的保鲜效果最好,并且在低温环境下能更好地保鲜;壳聚糖涂膜能明显降低芦笋的失重率,提高其总酸度、叶绿素含量、维生素C含量,是良好的芦笋保鲜剂。
