摘要:
城镇化在改变城乡人口结构的同时，对居民食物消费及生态足迹和环境承载力也有重要影响。利用福建省1995—2017年人口及食物消费数据，应用统计和非参数估计方法分析城镇化进程对城乡居民食物消费的转型趋势及其生态环境的影响。结果表明，城镇化对居民食物消费结构有重要影响，随着城镇化水平的提高，福建省城乡居民对植物淀粉类食物需求量减少，但对动物蛋白类食物需求量增加，并由此造成环境承载压力加大；城镇化对居民食物消费量及其生态足迹呈现非线性的倒“U”形变化关系，当城镇化率达到一定临界水平时，居民食物消费量将趋于稳定，由此所带来的食物消费生态环境压力也将减缓；另外，老龄化及地区经济发展水平对食物消费生态足迹也有显著负影响。最后，提出建立“大食物观”，加快发展海洋渔业和草食畜牧业，以期缓解福建省农业资源与生态环境的压力。
