摘要:
为探究野樱莓、蓝靛果、蓝莓、蔓越莓、黑莓和覆盆子的营养成分;对6种浆果矿物质元素、总酚、总黄酮和花色苷含量进行测定,并用电子自旋共振波谱仪(ESR)对6种浆果的DPPH自由基清除能力进行探究。结果显示,通过对比6种浆果的营养成分含量,野樱莓的镁元素、钙元素和铁元素含量,蓝靛果和覆盆子的钾元素含量,黑莓的锰元素和铁元素含量较高;野樱莓和蓝靛果的总酚含量、蔓越莓的总黄酮含量、蓝靛果与黑莓的花色苷含量在6种小型浆果中较为突出;DPPH自由基清除能力结果显示,蓝靛果与野樱莓清除自由基能力最强,100 g蓝靛果、野樱莓鲜果中约含有2 g维生素C;提示6种浆果富含丰富的矿物质元素及生物活性物质,且具有较强的清除自由基能力。
