摘要:
近年来,人们对健康的意识增强,功能性产品的消费也日益增长。芹菜作为一种药食两用的原料,具有降压、抗动脉硬化等功效。芹菜的功效价值有待于进一步开发。基于前人的研究结果,对芹菜的营养价值、目前研究的功能性成分和相关生物活性进行综述,并汇总目前以芹菜为原料制成的产品,总体来看,芹菜是一种具有开发价值和应用潜力的原材料。本研究旨在为芹菜相关产品的进一步深加工和系列高附加值产品的开发提供借鉴和参考。
