摘要:
对不同酸制备壳聚糖膜的成膜效果和特性进行了研究。结果表明，所制备涂膜液的pH值均在1.95~3.16之间，并且随着酸浓度增加，壳聚糖混合溶液pH值逐渐降低，从食用角度来说是安全的，可以作为食品保鲜用膜材料。复合膜溶液吸光度较低，即可推测涂膜后由膜材质本身对果蔬的光亮度造成的影响非常小，可用于食品保鲜。成膜效果均很好，在揭膜过程中发现随着酸浓度增加，膜的脆性逐渐减弱，柔韧度逐渐增强。1%壳聚糖+4%柠檬酸的成膜效果最小，壳聚糖复合膜最大压迫力最大，为0.76 kg。
