摘要:
对不同酸制备壳聚糖膜的成膜效果和特性进行了研究。结果表明,所制备涂膜液的pH值均在1.95~3.16之间,并且随着酸浓度增加,壳聚糖混合溶液pH值逐渐降低,从食用角度来说是安全的,可以作为食品保鲜用膜材料。复合膜溶液吸光度较低,即可推测涂膜后由膜材质本身对果蔬的光亮度造成的影响非常小,可用于食品保鲜。成膜效果均很好,在揭膜过程中发现随着酸浓度增加,膜的脆性逐渐减弱,柔韧度逐渐增强。1%壳聚糖+4%柠檬酸的成膜效果最小,壳聚糖复合膜最大压迫力最大,为0.76 kg。
