摘要:
采用碱提酸沉法从核桃中提取蛋白质,应用单因素试验和正交试验对提取条件进行优化。获得最佳提取参数为料液比为1 g ∶ 30 mL,提取温度为50 ℃,碱提pH值为8.0,酸沉pH值为4.0,核桃蛋白提取率可达12.15%。
