摘要:
对笃斯越橘、蔓越橘、兔眼越橘的2个品种和高丛越橘的1个品种果实花青素含量和抗氧化能力进行了对比分析。结果表明,每100 g冻果中,兔眼越橘园蓝果实中花青素含量最高,为276.24 mg,而笃斯越橘的含量最低,为67.85 mg,仅为兔眼越橘园蓝的24.8%。不同越橘果实对DPPH自由基、羟自由基、超氧阴离子自由基的清除能力及还原能力表现各有不同,综合分析,高丛越橘蓝丰果实具有较强的清除各自由基能力,抗氧化能力较强。不同种越橘果实花青素含量与其抗氧化能力没有相关性。
